From the Mantiqueira highlands, this lot comes out of Fazenda Sertão where elevation and careful processing shape a very grounded, structured cup. Sitting between 1100 and 1450 MASL, the cherries mature slowly, building density and depth before harvest. The mix of Red and Yellow Bourbon alongside Yellow Catuai and Yellow Catucai gives it both sweetness and backbone.

Processing leans into a controlled double fermentation, pulling out heavier sugars and amplifying texture rather than chasing bright acidity. The result is a composed, comforting profile. Chocolate-driven. Nutty. With a dark fruit edge that keeps it interesting.

In the cup, it lands round and steady. Dark chocolate upfront. Plum sliding through mid palate. Roasted peanut notes anchoring the finish. Not flashy. Just reliable, rich, and very workable, whether you’re running it straight or building blends around it.
